I work from Gdańsk, Poland. Dairy-free and gluten-free products, protein-focused ingredients and international staples are widely available here, and after fifteen years in professional kitchens I can work with every kind of product. Before we start, I will review the full recipe list and flag anything problematic within 48 hours – with a substitution proposal, so nothing blocks the schedule. Based on your brief, I do not expect availability issues.
